Tomato Soup with Oregano

Saute 1 chopped onion and 2 tsp. minced garlic in 1 Tbs. olive oil. Stir in 28 oz can diced tomatoes, 3 tsp. oregano, 1 tsp. vinegar, clash hot sauce, 1 cup vegetable broth and 1/2 cup soy milk; boil and remove from heat. Puree with immersion blender or in small batches in an upright blender. Slimmer puree to meld flavors. Serves 2
