The quinoa should be drained well before roasting.<\/p>\n<h2>Ingredients:<\/h2>\n<ul>\n<li>1 cup quinoa<\/li>\n<li>1\/2 cup slivered blanched almonds<\/li>\n<li>1 tsp vegetable oil<\/li>\n<li>1 1\/2 cups boiling water<\/li>\n<li>1 vegan vegetable bouillon cube<\/li>\n<li>1\/2 tsp salt<\/li>\n<li>1 cinnamon stick<\/li>\n<li>1 bay leaf<\/li>\n<li>1\/2 cup dried cranberries<\/li>\n<\/ul>\n<h2>Directions:<\/h2>\n<ol>\n<li>Soak the quinoa 15 minutes in cold water<\/li>\n<li>Stir the quinoa with your hand, pour off most of the water and drain through a fine mesh strainer<\/li>\n<li>Shake dry in the strainer, then set the strainer over a bowl or pitcher<\/li>\n<li>Heat a wide bottomed pan on medium heat and add the oil<\/li>\n<li>Stir and toast the sliced almonds until golden, then remove from pan<\/li>\n<li>Add the quinoa. Stir and toast until dry and turning color<\/li>\n<li>Add boiling water, veggie cube, salt, bay leaf and cinnamon stick, and dried cranberries<\/li>\n<li>Bring back to boil, cover, turn the heat to simmer, cook for 10 minutes or until all the water is absorbed<\/li>\n<li>Remove from heat and allow to sit five minutes with the lid on<\/li>\n<li>Fluff gently with a fork and serve<\/li>\n<\/ol>\n<p>Try Quinoa today!
