Stir in quinoa and 1\/4 tsp salt and return heat to low, cover, and simmer until water is absorbed and quinoa is tender, about 20 minutes.<\/p>\n<p>Heat oil in large nonstick skillet over medium high heat while quinoa cooks. Add onion and cook, stirring, until tender, about 3 minutes. Stir in snow peas and garlic and cook 2 minutes. Add broth, apricot spread, and vinegar. Simmer, stirring constantly, 1 minute to deglaze skillet.<\/p>\n<p>Add half of the chard, cover, and cook 3 minutes. Add remaining chard, cover, and cook, stirring, until chard is wilted, about 2 minutes.
