Here is a delicious recipe that the whole family will love.<\/p>\n<p>&nbsp;<\/p>\n<p><strong>Ingredients:<\/strong><\/p>\n<ul>\n<li>1 cup chopped mushrooms<\/li>\n<li>1 cup corn<\/li>\n<li>1 Tbs. olive oil<\/li>\n<li>I can vegetarian refried beans<\/li>\n<li>1 bag (9 oz) baked tortilla chips<\/li>\n<li>1 cup shredded reduced-fat Mexican cheese blend<\/li>\n<li>1 jar (11.5&nbsp;oz) chunky salsa<\/li>\n<li>1 pkg. (7 oz) guacomole<\/li>\n<\/ul>\n<p>&nbsp;<\/p>\n<p><strong>Directions:<\/strong><\/p>\n<p>1. In large skillet over medium heat, cook mushrooms and corn in oil 5 min. or until mushrooms are tender, stirring often. Stir in beans. &nbsp;Cook 2 min. or until heated through.<\/p>\n<p>2. Heat over to 350 F. Arrange tortilla chips on oven safe plattter. &nbsp;Sprinkle with shreeded Mexian cheese blend. &nbsp;Bake 3 min. or until cheese melts.<\/p>\n<p>3. Top chips with bean mixture, salsa and guacamole. &nbsp;Serve with low-fat sour cream, lime wedges, jalapeno slices and scallions, if desired.<\/p>\n<p><strong>Active Time: 10 min.
