Preheat oven to 425 degrees. Spray jelly-roll pan with non-stick cooking spray.\u00a0 Arrange chicken on pan.\u00a0 Rub chicken with \u00bd teaspoon ginger; sprinkle with \u00bd teaspoon salt and \u00bc teaspoon pepper.\u00a0 Roast 10 to 12 minutes or until no longer pink in center (165 degrees)<\/p>\n<p>2. Meanwhile, with knife, cut peel and white pith from orange; discard.\u00a0 Cut on either side of membrane to remove each segment from orange; place half of segments in 2-quart saucepan.\u00a0 Squeeze juice from membranes into saucepan.<\/p>\n<p>3. To same saucepan, add celery, onions, vinegar, remaining \u00bc teaspoon ginger, and 1\/8-teaspoon salt.\u00a0 Heat to boiling on high.\u00a0 Reduce heat to simmer; cook 7 minutes or until celery is crisp-tender, stirring occasional.\u00a0 Remove from heat; stir in cilantro and reserved segments.<\/p>\n<p>4.
