{"id":717,"date":"2011-05-22T20:55:13","date_gmt":"2011-05-23T00:55:13","guid":{"rendered":"http:\/\/shrinktheplanet-weightloss.com\/weightloss-diets\/?p=717"},"modified":"2015-11-21T09:51:50","modified_gmt":"2015-11-21T14:51:50","slug":"low-fat-chicken-penne-marengo-recipe","status":"publish","type":"post","link":"https:\/\/shrinktheplanet-weightloss.com\/weightloss-diets\/low-fat-chicken-penne-marengo-recipe\/","title":{"rendered":"Low Fat Chicken Penne Marengo"},"content":{"rendered":"<p>Healthy Penne Chicken Marengo Recipe<\/p>\n<p>EASY PREP: Prep: 10 min Cook: 20 min<\/p>\n<p><strong>Ingredients:<\/strong><\/p>\n<ul>\n<li>8 ounces whole wheat penne pasta<\/li>\n<li id=\"rptIngredients_ctl01_liIng2\">1\/2 cup dry-packed sun-dried tomatoes<\/li>\n<li id=\"rptIngredients_ctl02_liIng2\">1\/2 pound boneless, skinless chicken breasts, cut into 1\/2&#8243; cubes<\/li>\n<li id=\"rptIngredients_ctl03_liIng2\">1 tablespoon all-purpose flour<\/li>\n<li id=\"rptIngredients_ctl04_liIng2\">1\/2 teaspoon dried thyme<\/li>\n<li id=\"rptIngredients_ctl05_liIng2\">1\/4 teaspoon ground black pepper<\/li>\n<li id=\"rptIngredients_ctl06_liIng2\">1 tablespoon olive oil<\/li>\n<li id=\"rptIngredients_ctl07_liIng2\">3 cups sliced mushrooms<\/li>\n<li id=\"rptIngredients_ctl08_liIng2\">1\/2 cup chicken broth<\/li>\n<li id=\"rptIngredients_ctl09_liIng2\">1 can (15 ounces) crushed tomatoes in puree<\/li>\n<li id=\"rptIngredients_ctl10_liIng2\">1\/2 cup orange juice<\/li>\n<li id=\"rptIngredients_ctl11_liIng2\">1 teaspoon grated orange zest<\/li>\n<li id=\"rptIngredients_ctl12_liIng2\">1 teaspoon brown sugar<\/li>\n<li id=\"rptIngredients_ctl13_liIng2\">1\/8 teaspoon salt<\/li>\n<\/ul>\n<p><strong>Directions:<\/strong><\/p>\n<div>\n<div>1.Bring a large pot of water to a boil. Cook the pasta according to package directions until al dente. Drain in a colander and transfer to a warmed serving bowl.<\/div>\n<\/div>\n<p>2.Meanwhile, in a small bowl, cover the sun-dried tomatoes with boiling water and soak for 5 minutes. When softened, drain and chop coarsely. Set aside.<\/p>\n<p>3.Toss the chicken with the flour, thyme, and pepper. In a large, heavy skillet, heat the oil over high heat until hot but not smoking. Add the chicken and cook, stirring occasionally, for 2 to 3 minutes, or until golden brown. Add the mushrooms and 2 tablespoons of the broth. Cook, stirring occasionally, for 2 to 3 minutes, or until the mushrooms are barely softened and have begun to release their juices.<\/p>\n<p>4.Add the crushed tomatoes (with puree), orange juice, orange zest, sugar, salt, the sun-dried tomatoes, and the remaining broth. Bring to a boil, scraping the bottom of the pan with a wooden spoon to release the browned bits. Reduce the heat to medium-low and simmer for 8 minutes, or until the sauce is thickened and the flavors are blended.<\/p>\n<p>5.Pour the mixture over the pasta and toss to coat well.<\/p>\n<p>Makes 4 servings. 389.9 calories per serving<br \/>\n5.8 g fat (1 g sat. fat), 513 g sodium,<br \/>\n20 g carbs, 5.6g fiber, 25 g protein<\/p>\n<p>Happy Cooking!
