This sandwich is based on the classic French croque monsieur.<\/p>\n<p>Turn it into a croque madame by adding a fried egg on top.<\/p>\n<p>Ingredients:<\/p>\n<ul>\n<li>1\/2 small shallot, finely chopped<\/li>\n<li>2 tsp red wine vinegar<\/li>\n<li>Kosher salt and pepper<\/li>\n<li>8 slices country bread<\/li>\n<li>1\/4 cup Low fat mayonnaise<\/li>\n<li>8 oz Gruyere or Swiss Cheese, coarsely grated (about 2 cups)<\/li>\n<li>1\/2 lb leftover roast turkey, sliced<\/li>\n<li>8 thin slices deli ham<\/li>\n<li>2 Tbsp olive oil<\/li>\n<li>8 cups baby arugula or other greens (about 4oz)<\/li>\n<li>1 cup small seedless red grapes, quartered<\/li>\n<\/ul>\n<p><strong>Directions:<\/strong><\/p>\n<p>Heat broiler with oven rack positioned 5 to 6 in. from the heat. \u00a0In a medium bowl, stir together the shallot, vinegar and 1\/4 tsp salt; set aside.<\/p>\n<p>Line a rimmed baking sheet with foil. \u00a0Arrange 4 slices bread on the prepared sheet and spread each with 1 Tbsp mayonnaise and 1\/4 tsp mustard. \u00a0Top with one-third of the cheese, then the turkey and ham. \u00a0Sprinkle half the remaining cheese on top and broil until the cheese is melted and the sandwich filling is warm, 3 to 4 minutes.<\/p>\n<p>Top the sandwiches with the remaining bread and sprinkle with the remaining cheese. \u00a0broil until the cheese is melted, 1 to 3 minutes.<\/p>\n<p>Add the oil and remaining 1\/2 tsp mustard to the vinegar mixture and whisk to combine. \u00a0Toss with the arugula and grapes and serve with the sandwiches.<\/p>\n","protected":false},"excerpt":{"rendered":"<p>Enjoy turkey leftovers with this delicious sandwich!
