Ingredients:
- 2 lemons, divided
- 6 halibut steaks or tilapia fillets
- 2 tbs. olive oil
- 2 tbs. white wine
- 2 cloves garlic, peeled and minced
- 1/4 cup chopped scallions
- 2 tbs. chopped fresh parsley
Directions:
- Heat grill. Cut six 10″ squares of heavy duty aluminum foil. Zest and juice 1 lemon; trim and slice remaining lemon. In medium bowl, whisk together olive oil, 3 tbs. lemon juice, 2 tsp. lemon zest, white wine and garlic until blended. Stir in chopped scallions and parsley.
- Season halibut steaks with salt and ground black pepper, if desired. Place 1 halibut steak in center of each aluminum foil square.
- Pour lemon-oil mixture evenly over halibut steaks. Top with lemon slice. Fold foil over fish and press to seal edges tightly. Grill 8 min., or until fish flakes easily with fork. Garnish with chopped fresh parsley, if desired.
