Mix and Match Meal Choices
Choose one option for each main sitting
The Basic Meal: 1/2 cup lentils or chickpeas or chickpeas; if desired, once a day you can swap in 1/2 cup berries, oatmeal, brown rice or quinoa
Option 1
Better than Oatmeal Bowl: Mix 1/2 cup hot water, 1-2 tbs. chia seeds, 1-2 tbs. hemp seeds, 1 tbs. melted coconut oil, 1 tbs. almond butter, hearty sprinkle of cinnamon stevia and sea salt to taste.
Option 2
1 Serving Easy Turkey Meatloaf (recipe below)
1 1/2 cups steamed cauliflower whipped in processor with butter and optional splash cream 1/2 cup greens sauteed in butter.
Meatloaf Recipe
- 1 lb. ground turkey
- 1 diced onion, sautéed in olive oil
- 1 roasted red pepper, diced
- 1 egg, whisked
- 3/4 cup almond meal
- 1 tsp. dried basil
- 3/4 cup almond meal
- 1 tsp. dried thyme
- 1 tsp. dried parsley
- 1 tsp. dried garlic powder
- 1/2 cup no-sugar added marinara, such as Rao’s
Preheat oven to 350 degrees. Lightly grease loaf pan; set aside. Mix all ingredients except the sauce until well combined; adding salt and pepper to taste. Transfer to a light greased loaf pan and bake until cooked through, 40 – 60 minutes. Remove from oven and as meatloaf cools, warm sauce. Top meat with sauce. Serves 6.
