This twist on a classic has all the flavor for a fraction of the calories, thanks to the Greek yogurt-herb sauce.
Ingredients:
- 1 cup nonfat Greek yogurt
- 2 tbs. chopped fresh herbs, like parsley, dill and tarragon
- 2 Tbs. lemon zest
- 1 tsp. garlic salt
- 1 lb. green beans, trimmed
- French-fried crispy onions
- 1 cup of Walnuts
- In small bowl, stir together nonfat Greek yogurt, chopped herbs, lemon zest and garlic salt. Season to taste with pepper; set aside
- Bring pot of salted water to a boil. Add green beans. When beans rise to surface, 4 to 5 min., they are cooked al dente and will be ready to drain at this point. Allow beans to drain completely; transfer to serving platter. Drizzle creamy herb sauce over beans. Sprinkle with french-fried onions as desired for garnish.
